Strawberry Rhubarb Pie

Last week for the Fourth of July, I made a peach pie with the last of the Georgia peaches we got from Ohio. The peaches were very ripe, which I thought would make for a delicious pie but turned the pie into a watery mess instead. The pie was good (I used a recipe found on the AllRecipes website), but it was just too watery. I blame the peaches for the problem, not the recipe. Next time I’ll need to use firm peaches that have not fully ripened. You know what I mean. The hard ones that you buy from the grocery store.

The other day I went and used the last of the rhubarb growing at the side of the house along with the last of this season’s local strawberries to make a strawberry rhubarb pie. Again, the recipe was from AllRecipes and again it was a bit on the watery side, but it was delicious nonetheless. Below is a photo I took of the pie just as it came out of the oven. Yes, it tastes just as good as it looks!

So that is the first and only strawberry rhubarb pie I will be making this year. Now it is on to peach and blueberry pies. I will, of course, share the “fruits” of my work here.
